From the hills of Tuscany to a hill in the Harwiches...

There is a little town in Italy on the center of Chianti called Greve. It sits amoungst the rolling hills that explode with vineyards producing some of the finest Chianti and Super Tuscan blends in all of Italy.

We would like to transport you to our favorite trattoria - a little hole in the wall - in the square between the butcher shop and the bakery in the town of Greve.

Pasta alla Vongole (Pasta with Clams)

12 Littleneck Clams
1 Cup Fish Stock
1/2 Cup White WInr
1/4 Cup Lemon Juice
2 TBS Unsalted Butter
1/2 TS Red Pepper Flakes
1/2 Cup Flat Parsley, Chopped
2 TBS Garlic
Olive Oil
1/2 Cup Toasted Breadcrumbs
1/2 Cup Pancetta, Chopped
1 Box Tagliatelle Pasta Noodles (or Linguini)

Steam littlenecks in a covered pot with all ingredients except the oil, bradcrumbs, pancetta and pasta noodles. Once the clams open, remove to plate. Add the pasta noodles in the pot and cook in the fish stock.

Place the pasta in the middle of a plate surrounded by the clams. Sprinkle the toasted breadcrumbs and pancetta on top and add a light srinkle of olive oil. Serve.
