Lobster Ravioli eith White Chocolate and Vanilla Froth
Pasta Dough
1 Lb A P Flour (Sifted)
2 each Whole Egg
1 each Egg Yolk
1 ½ Tbs Extra Virgin Olive Oil
2 oz Green Lobster Roe
1/3 tsp Kosher Salt
As neede Cold Wate
1. puree the oil, lobster roe and eggs in a blender until smooth
2. Combine all ingredients in a stand mixer with a paddle attachment
3. Add Water if needed
Ravioli Filling
1 Lb Cooked Lobster Meat
½ cup Marscpone Cheese
½ oz Parmesan Cheese Grated
½ each Lemon zest and Juice
1/8 cup Chives
As needed Kosher Salt and Pepper
1. Dice lobster meat 1/3 inch
2. Combine with remaining ingredients
Vanilla Froth
1/2 Cups Skim Milk
1 Each Vanilla Bean split and scraped
1 gram Lecithin
5 grams Withe Chocolate
.5 gram Kosher Salt
1. Warm Milk and Vanilla seeds and pod but do not boil. Steep for 30 minutes
2. Remove Remove the vanilla pod and add the remaining ingredients
3. Use immersion blender to froth
