Mussels with Cape Cod Red Beer®
1lb Mussels, scrubbed and de-boned
1 Plum Tomato, roasted and diced
2 TB Butter
2 Garlic Cloves, sliced thin
1 TB Old Bay Seasoning
1 Slice Sourdough Bread, grilled
½ Cup Cape Cod Red Beer
Preparation
In a sauté pan, cook garlic in 1 TB of butter until soft. Add mussels, beer and Old Bay seasoning. Cover and steam open mussels discarding any that remain closed. Add tomato and remainder of Butter. Pour into serving dish and top with the grilled sourdough bread.
